I typically buy canned black beans, but if you have extra time, you can make homemade black beans. Other beans to try with this would be chickpeas.
For the broccoli, I prefer to use frozen broccoli where I heat it up in the microwave.
For the rice, I find that regular brown rice tastes better than instant.
4. Stir Fry Shrimp
When you have stir fry shrimp one night for dinner, make sure to double the recipe. This way you can use the leftovers for lunch the next day.
You can add either brown rice or make it low-mein by adding spaghetti noodles.

I love a good stir-fry. They are so easy to throw together, but they have so much flavor. It’s my favorite meal to make when I have veggies I need to use up. We eat it on it’s own or serve it over rice (regular or cauliflower) for a delicious and easy weeknight meal.
