The two most important ingredients for this lunch idea – brown rice and grilled chicken. And, to make it even easier, you can buy pre-made grilled chicken (love the grilled chicken at Aldi!).

I typically buy canned black beans, but if you have extra time, you can make homemade black beans. Other beans to try with this would be chickpeas.

For the broccoli, I prefer to use frozen broccoli where I heat it up in the microwave.

For the rice, I find that regular brown rice tastes better than instant.

For seasoning, you can use low-salt soy sauce, Mrs. Dash, or one of my favorites, Spike.

4. Stir Fry Shrimp

When you have stir fry shrimp one night for dinner, make sure to double the recipe. This way you can use the leftovers for lunch the next day.

You can add either brown rice or make it low-mein by adding spaghetti noodles.
